watermelon squares
chunks of goat cheese
red onion cut into thin slices
torn mint leaves
mix it all together gently and it's as easy as that. serve in a big bowl with salad tongs.
we were visiting family in sydney australia this past week and my cousin jane whipped this together on a scorching hot day and it was so refreshing, it hit the spot. i know it sounds like a quirky mix of ingredients but i promise it works.

i love this recipe! last year i did a similar thing - watermelon squares with feta cheese and cracked pepper served in the hollowed out watermelon... people looked at it funny but yummmmy. thanks for sharing. please post picks from australia!
